Uzbek knives - Shakhrikhan pichoks (pchaks) - is a two-hundred-year history of blacksmithing art of Fergana valley, which is known far beyond the borders of Uzbekistan and which embodies the craftsmanship carefully preserved by the people and embodied in each pichok, which is created by hand not only as a knife, but also as an amulet, a breadwinner and a protector for the home, where it is destined to live a long life.

The family of master Umarov Muzaffar has been engaged in blacksmithing for about 25 years. The art of blacksmithing in the town of Shakhrikhan, located in the picturesque Fergana Valley, is a ‘visiting card’ of Uzbekistan. Shakhrikhan knives are known both within the country and far beyond its borders. The secret of such popularity is connected with the special manual technology of steel processing, which has been preserved for 9 generations of Shakhrikhan blacksmiths and carefully passed from master to apprentice. Blacksmiths who make knives are called ‘pichokchi’ (‘pchakchi’) in Uzbekistan.
Each pichokchi has his own way of hardening steel, which he passes on only to his apprentices. If during hardening of steel the knife is not held long enough, it will quickly become blunt, and if it is held long enough, it will break. After hardening, the blade is sharpened on a corundum wheel with periodic immersion in water, which also gives the steel an additional hardening. The master determines the moment when the blade is finished by ear, catching the ‘correct singing’ of the blade when it touches the wheel, after which he uses a chisel to make a longitudinal groove in the upper part of the left blade blade, which is called a ‘coma’, which is the knife's stiffening rib. The master then proceeds to ‘bluing’ the blade, which gives it anti-corrosion properties. The handle of a pichok can be made of bone, argali horn, wood, textolite, plexiglass. Shahrikhan pichoks are known all over the world and are highly valued, as their blades are perfectly straight and the knives are perfectly balanced. A good pichok will be felt by its owner as an extension of his hand, will serve long and faithfully.
